Main material:Hand noodles 4 two, pork 3 two (fat half that can be), medium-size tomatoes (3 to 4 two weight), one green chilies, two rape trees.
Ingredients:Onion, edible oil, star anise, pepper, salt, monosodium glutamate, soy sauce.
Tools:A wok, a hedge, a basin.
Preparations:
- Remove the lean meat from the pork and then cut it into filaments.
- Cut the Scallions into chopped green peppers and tomatoes into small pieces. Rape can cut the stems and leaves along the roots. If the stems and leaves are too long, cut them from the middle of the stems and leaves.
Process:
- Stir-fry pot with clear water, boil, add a little salt, then put the noodles in the pot, cook for 5 to 6 minutes; Cook until the noodles do not have the taste of raw noodles, the fire off the pot, fish the noodles in a basin filled with cold water for backup.
- Wash the wok, boil it, put it in oil, heat it to smoke, put it into the shredded fat, a little pepper star anise; and other fat meat in the fried dry, use a spatula to remove dried meat and pepper star anise.
- Add chopped green onion, green chilies, and shredded lean meat. Stir fry until the shredded meat is no longer red, add rape, continue to stir fry for 1 minute; add tomato, then add a proper amount of salt, a little soy sauce color; remove the noodles from the water and stir fry them in a pot. After the juice of the tomato is fully blended into the noodles, stop the fire. Add a little MSG and stir them evenly.
In this way, a dish of fragrant shredded pork noodles is finished.
Note:
- Food Ingredients: it is best to choose the kind of fat and thin pork, and the fat meat can be used to refine a part of animal oil. In this way, the fried noodles will taste more delicious. The Noodles should be hand-baked noodles. If common noodles are used, you need to select a rough area to prevent the noodles from being ground up.
- After the noodles are cooked, put them in the cold water and wash the flour of the noodles. If the noodles are not cleaned, you can change the water. If you do not wash the flour, and when you fry the noodles, the viscosity of the fried noodles will be too high, the paste pan, and the taste is not good.
- The Soy Sauce cannot be too much, resulting in the noodle color being too deep and taste too heavy.
