SQL SECURITY DEFINER indicates that the DEFINER must have relevant permissions.

SQL SECURITY INVOKER indicates that the caller has the relevant permissions.

It's easy. You can simply experiment and understand it. (For two users, one with the EXECUTE permission, the other with the create routine permission, and then each with the same call) I will not give an example here.
