Ubiquity installer is not currently supported, as I know, grub has a bug (https://bugs.launchpad.net/ubuntu/+source/grub2/+bug/1527727) (fixed in my PPA, ppa: cmiller/ppa ).
If you are completely installed, You can boot through the existing tools in the release version (my PPA will change somewhat in Xenial), and continue the complete installation of ZFS after mounting.
You still need an EFI partition to help guide grub.
The authorization method of ZFS is CDDL, which is incompatible with GPL authorization of Linux kernel. However, Ubuntu 16.04 LTS (Xenial Xerus) will be an interesting release version.
