Option -- Session Option -- Appearance
The example is set to UTF8 as follows:

 

2. SecureCrt sets the encoding of the current session
Option -- Session Option -- Terminal -- Log File

OverWrite file overwrites the original log. Append to File appends the new log content to the original log.

Each time the prompt for filename prompts the user to enter the log name
Start log upon connect
