How do you upgrade the ubuntu server?

The website developed by a friend uses Ubuntu server 10.04. Ubuntu has many updates, including security updates, and other software or even Kernel updates. As the server is stable, I would like to ask if all users who use ubuntu as the server are immediately patched after the update? Or do I have to install security updates without installing software updates? What are the policies for server updates? Maybe ubuntu is an error. Should I choose Debainstable with higher security?
