Camellia Oil, also known as camellia oil, tree oil, and tea oil. it is obtained from Camellia oleifera Abel tree seeds and is one of China's oldest edible vegetable oils. china is the country with the widest distribution of tea plants in the mountains in the world. It is the largest production base for Camellia in the world, mainly concentrated in Zhejiang, Jiangxi, Hunan, and Guangxi provinces, in addition, only Southeast Asia, Japan and other countries have a very small distribution [1]. there are mainly the following types of Camellia cultivated in China: ordinary camellia, which accounts for about 98% of the total area of Camellia, followed by safflower Camellia distributed in Zhejiang province, Nanshan tea in Guangdong province, and Safflower Camellia in Tengchong in Yunnan Province. camellia oil, which is made from Camellia seeds, is light yellow in color, clear and transparent, and smells fragrant. it is good edible oil. thanks to its excellent quality and unique flavor, it has been widely used in China for thousands of years. in foreign countries, in recent years, after analysis, it is found that the fatty acid composition of tea oil is particularly similar to the preferred Edible Oil-olive oil in Europe and the United States. The content of linoleic acid and linoleic acid is more than 80%, therefore, tea oil is becoming more and more important and considered as an Oriental oil with important commercial value. Therefore, it is of great significance to strengthen the study on the nutritional composition of camellia oil and its health care function to develop edible health oil resources in China.
I. Composition and biochemical characteristics of Camellia Oil

The physical and chemical properties of camellia oil are very similar to those of olive oil (see table 1). However, olive oil has a unique yellow-green color and special flavor. Compared with olive oil and camellia oil, it has very little unconfirmed content, relatively easy for human body to absorb and digest. in addition, Camellia Oil also contains biological activity substances not found in olive oil, such as camellia, Camellia, and tea polyphenols, tea polyphenols can reduce cholesterol and prevent tumors.
Composition of 1.2 fatty acids
The fatty acid composition of camellia oil and several edible oils can be found (see table 2).
