To use Chinese in latex, you need to add a package that supports Chinese. Here's how:
1. Add CJK Chinese Pack:
\USEPACKAGE{CJK}
2. Start the Chinese environment, use the song body, only after this command can be used in Chinese:
\begin{cjk}{gbk}{song}
3. End the Chinese environment:
\END{CJK}
Note: If you need to use a different font in your document, you can use the following command:
Using italics: \cjkfamily{kai}latex
Using imitation: \cjkfamily{fs}latex

Font problems
due to the copyright of the font, CJK macro package only the text Ding song body and text ding italics these two fonts. Ctex added the GBK encoded six Chinese fonts (Arial, imitation, italics, blackbody, script and young circles), if you install Ctex, you can use these fonts similar to the following: \documentclass{article}
\USEPACKAGE{CJK}
\begin{document}
\begin{cjk}{gbk}{song}
Arial.
\END{CJK}
\begin{cjk}{gbk}{fs}
Fangsong.
\END{CJK}
\begin{cjk}{gbk}{kai}
in italics.
\END{CJK}
\begin{cjk}{gbk}{hei}
blackbody.
\END{CJK}
\begin{cjk}{gbk}{li}
script.
\END{CJK}
\begin{cjk}{gbk}{you}
Young circle.
